I am not sure, when he first popped up, but it was through Jonathan that I penned the predecessor to this book. I wrote it for my family, friends and customers many years ago. You see, I was in the oyster business. I had a hatchery and a farm. I bought oysters from all over Ireland and shipped them off to oyster lovers in continental Europe. I also supplied the local restaurants with fresh oysters, striving to create a demand for what has since turned out to be a very popular culinary delight.
